Fried Chicken
Well, a fried chicken substitute.
I had a fun girls night last night w/ my friends Sammy and Shannon. We just chilled out and watched the movie The Help. If you can get through this movie and not crave fried chicken, god bless you. Hahaha.
I remember watching an interview with the cast after this movie was made and they all said that when they were on site for the movie they were all eating the food because they were trying to really get into the time period. They also said they all had to have their costumes and dresses taken out at least two times because they all packed on some pounds.
So, before you run to Kentucky fried chicken for some fake fried chicken let me give you a healthy alternative recipe.
This recipe is delicious, and you don’t just need to use chicken. Last time I made it I used veal cutlets instead of chicken just to change it up.
- In the book it is titled Breaded Chicken Breast, but I don’t think that title is fun enough. We will call it,
Minnie’s Healthy Fried Chicken. Enjoy
Serves 4-6
What you need to get started:
1. 8 skinless chicken breasts
2. One and a half cups unbleached flour
3. 1 tsp pepper
4. 4 eggs, beaten
5. 2 cups whole grain bread crumbs ( gluten free is fine too)
6. 1/2 cup grated parmesan cheese ( I used raw parmesan)
7. 4 tbsp Butter
8. 4 tbsp Extra Virgin Olive Oil ( cold pressed)
How to make – So Simple
- Start by pounding the meat lightly w/ a meat hammer ( If you don’t have one, don’t worry)
- In a large skillet add your olive oil and butter. Turn to medium heat. Use a little more than 1/2 of what it calls for. After you cook 1/2 you chicken, add the rest so that the end of the batch can get crispy too.
- Mix the flour and pepper together on a plate.
- Beat the eggs in a bowl
- Mix the bread crumbs and parmesan cheese on a plate
- Make an assembly line w/ the plate to make the next step an easy one.
- Using tongs dip the chicken in the flour, then dip in the egg, then dip into the bread crumbs/cheese, drop into the skillet. Make sure the chicken gets fully covered with all the ingredients.
- Saute a few at a time for about 7 min. per side. Be careful not to burn.
- You can keep warm in the oven as you wait for the remainder to finish.
- Serve with some fresh veggies and you are good to go.
These are also great the next day as leftovers.. definitely not as crispy, but they definitely beat out some boring chicken or turkey.
